Today’s Ramadan Menu: Ulam Rice, Young Coconut Ice, Javanese Sugar and Salt Chili Tofu

Menu Open: Nasi Ulam Betawi

Material:

  • 2 glasses of white rice, wash

Rice seasoning:

  • 1 lemongrass, crushed
  • 1 space galangal, crushed
  • 1 bay leaf
  • 1/4 teaspoon salt
  • 1 tbsp cooking oil

Serundeng:

  • 1/2 grated coconut
  • 3 pieces of lime leaves
  • 1 lemongrass, crushed

Ground spices:

  • 3 cloves of garlic
  • 3 spring onions
  • 1 red chili
  • 1 tablespoon shrimp, roasted
  • 1 teaspoon salt
  • 1 tsp sugar / to taste

How to make:

  1. Cook the rice with all the spices in the rice cooker until cooked.
  2. For the serundeng, saute ground spices until fragrant. Enter the lime leaves and lemongrass, cook until the seasoning is cooked.
  3. Enter the grated coconut and mix well. Taste test, if it is right, keep stirring until the grated coconut is dry and brownish and has a savory aroma.
  4. Serve the ulam rice with a sprinkling of serundeng complete with a variety of side dishes.

Takjil Menu: Young Coconut Ice, Javanese Sugar

Material:

  • 2 young coconuts, take the water and scrape the meat
  • 3 tablespoons brown sugar, comb
  • 2 tbsp sugar
  • 1 sheet of pandan leaves
  • ice water to taste

How to make:

  1. Boil 150 ml of water, add brown sugar and granulated sugar until dissolved, add the pandan leaves and cook until it boils and the sugar thickens slightly.
  2. Arrange water and young coconut in a glass, pour enough coconut sugar and ice water.
  3. Coconut sugar, coconut ice ready to serve.

Sahur Menu: Salt Chili Tofu

Material:

  • 1 tofu board (diced)
  • 5 pieces of cayenne pepper (cut into pieces)
  • 4 red chilies (cut into pieces)
  • 3 garlic cloves (chopped)
  • salt to taste
  • All-purpose seasoning flour (to taste)
  • Cooking oil

How to make:

  1. Mix the diced tofu with the seasoning flour. Mix gently and try to coat all parts of the tofu with flour.
  2. Fry over medium heat. Fry until dry. When cooked, remove and drain.
  3. Saute garlic, bird’s eye chilies and red chilies until fragrant and cooked. Add tofu and mix well. Enter the salt to taste, stir again.
  4. Serve the salt chili tofu with warm rice.
